Ingredients

  • 1 kg Mini Potatoes
  • 1 teaspoon Parsley
  • ½ teaspoon Rosemary
  • ½ teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion granules
  • ½ teaspoon Black pepper
  • Salt to taste
  • 1.5 tablespoons Olive oil

Instructions

  • Wash the mini potatoes to remove dirt from them.
    Use a kitchen towel to pat them dry. If the sizes don't match, you can cut the bigger ones to achieve a similar size.
  • Put the potatoes in a bowl then add garlic powder, rosemary, black pepper, parsley, salt, and olive oil.
    Mix till the potatoes are well covered in the spices.
  • Arrange the seasoned little potatoes in the air fryer basket.
    Air fry potatoes at 400F/200C for 20 minutes or till fluffy inside with crispy skin. Shake the basket halfway into the cooking time.
  • Bring out the potatoes and serve.

Notes

Tips
  • Try to use similar sized potatoes so they cook evenly.
  • After washing the potatoes, pat dry with paper towels before seasoning.
  • You can cut the mini potatoes into two if you will like more crispy sides.
  • Don't overcrowd the air fryer basket. It's best if the potatoes are in a single layer in the basket or rack.
  • You can add grated parmesan cheese to make it parmesan roasted mini potatoes
